The delicate taste of the Valle d’Aosta lard tradition marries the persuasive smoking with natural beech wood. In fact, this very special product represents the synthesis of two traditions: the Valdostan tradition of Lardo di Arnad PDO (it is made using the same process) and the South Tyrolean tradition of smoking, which is masterfully crafted.
The spallotti of heavy National pork rest 3 months in wooden “doils” with the same Valdostan spices used in the recipe for Lardo d’Arnad and, at the end of the seasoning process, are sent to South Tyrol, where the art of smoking has been a tradition since ancient times. Smoked Lard “Sintesi” is a cured meat that can be enjoyed in a variety of ways: thinly sliced on the appetizer board or to fill tasty sandwiches, it also accompanies the most varied ingredients of Italian recipes in trendy gastronomic combinations.
