Double Concentrate is obtained from tomatoes deprived of water, through an evaporation process. The aim is to concentrate the dry residue and the density which, by law, must fall within a range between 28% and 30%. To obtain 1 kilo of Double Concentrate it is necessary to use at least 5 kilos of fresh tomatoes. It is used to give color, density and flavor to each dish or to enrich recipes that require long cooking.
